I’m so happy every time fresh vegetables and fragrant herbs appear in the store! After the cold season, you just want to cook something fresh and juicy. If you’re looking for meal inspiration, try this recipe for a cold cucumber shrimp salad.

You can replace hard cheese with spreadable cheese wedges, and use olive oil with a small amount of Italian herbs for the dressing. Bon Appetit!

Peel the hard-boiled eggs and cut them into small cubes. Slice the hard cheese in the same way.

Wash and dice the cucumber. Boil unpeeled shrimps in salted water (for about 3 minutes), rinse in a colander, peel and remove the heads.

Place the ingredients in a bowl, add salt, plain yogurt and mix everything.

Garnish the salad with herbs before serving. If you want to make the dish more piquant, you can drizzle it with lemon juice or use mayonnaise instead of yogurt.
