Spring is the best time to stock up on vitamins after a long cold winter. And this green shakshuka with spinach is going to save the day! You can cook it only in half an hour. Shakshuka may be an Israeli dish, however it’s not only popular in its homeland.

Green shakshuka combines delicious eggs and spinach, peas and spices. And crumbled feta makes it filling, soft and flavorful. You can serve shakshuka as any meal: breakfast, lunch or dinner.

Heat butter in a frying pan and place coarsely chopped green onions and garlic in there, mix. Add coriander, caraway seeds, dried oregano and mix.

Squeeze lemon juice in a pan, add spinach and frozen peas. Season with salt, pepper and mix.

Gently beat the eggs and cook under the lid for 3 minutes. Add salt, pepper and chopped dill, crumble feta on top.

Serve this green shakshuka with a slice of bread or pita bread. You can easily experiment with the ingredients. Try adding your favorite spices or seasonal vegetables to your meal. Nutritious and healthy shakshuka will delight you and your loved ones.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages.
