Love the idea of MoonPie but looking for a more sophisticated recipe to wow your loved ones? This MoonPie-inspired dessert is just what you need!

Graham cracker crust, rich chocolate filling, and fluffy marshmallow meringue. These layers make the perfect flavor and texture combination. The decadent version of the beloved marshmallow sandwiches is sure to impress.

Steps

1
Done

First, make the crust. To a bowl add the crumbs, butter, and sugar. Stir to combine. Pour the crumbs into a 9-inch pie plate and form a crust.

2
Done

Bake in an oven preheated to 350 °F (180 °C) for 10 minutes. Let the crust cool on a wire rack for 20 minutes.

3
Done

Spread the mini marshmallows on the crust. Place the pie plate in the oven for 3 minutes. Make an even marshmallow layer. Let it cool for 20 minutes.

4
Done

Make the filling. To a bowl add the chocolate chips. Pour very hot heavy cream over the chocolate. Set aside for a minute. Add the butter and salt. Whisk the mixture until smooth. Add in the vanilla extract and whisky (optional). Let the filling cool for 20 minutes. Pour the chocolate mixture over the pie and spread with a spatula. Cover with plastic wrap and set aside at least for 8 hours.

5
Done

To make the meringue fill a medium saucepan ⅓ full of water. Bring the water to a simmer. To a large heat-proof bowl add the egg whites, sugar, syrup, cream of tartar, and salt. Beat the ingredients together. Set the bowl over the saucepan. Cook and whisk. The sugar should completely dissolve. Remove from heat.

6
Done

Beat the mixture on medium speed until it starts to thicken. Increase the speed to high, and continue beating until the mixture becomes glossy and holds its shape.

7
Done

Add the vanilla extract and beat for 2 minutes. Top off the pie with the marshmallow meringue.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
