If you want to rediscover a childhood camping favorite — the so-called mountain pies — as an adult in a non-camp situation, this recipe for a crispy, melty meal is for you. These pizza sandwiches merge the best flavors of grilled cheese and pizza. On the outside, you will find a generous layer of butter and pizza-reminiscent spices. On the inside, you will taste the marinara sauce, mozzarella, and pepperoni.
Although traditional mountain pies require an open fire and a pie iron, you can easily make this recipe in your kitchen. Simply use an extra skillet as a sandwich press, and voila! You will get a somewhat different result, but your sandwich will turn out warm and gooey regardless.

Place white sandwich bread slices on a work surface and generously butter them. Next, season them with dried oregano and garlic powder. |

Turn the slices over and spread each with the marinara sauce. Divide shredded mozzarella between two of the bread slices, then cover them with pepperoni before sprinkling red pepper flakes on top. Close the sandwiches with the remaining two bread slices sauce-side down. |

Option 1: Cooking in a SkilletPlace a cast-iron skillet on top of them as a press. Cook until golden brown (approximately 2 minutes). Uncover, turn the sandwiches over, and repeat the process. |

Option 2: Cooking in a Pie IronPlace a sandwich inside a pie iron and hinge it closed. Place the iron on top of the embers of an open fire and cook for a couple of minutes. Turn the iron over, and repeat the process. Remove from the heat and let cool for 5 minutes while still shut. Finally, unhinge it, open it up and carefully remove the sandwich. Repeat with the other sandwich. |
