Fortunately, there are such simple and tasty recipes as this sponge cake with fruit that will save the day.

This light-as-a-cloud peach and kiwi fruit dessert is a great tea time snack that will keep you cozy and warm during cold evenings.

To get the fluffiest sponge cake, you need to thoroughly beat the eggs with sugar. Room temperature organic eggs work best. Beat them for at least 10 minutes at high speed. Then add citric acid and vanilla. Stir.

Sift the flour in advance. Gently and gradually add it with a spoon into the egg mixture. The batter should have a consistency of thick sour cream.

Peel the kiwi fruits and peaches and cut them into small pieces. You can replace them with seasonal fruits or the ones you like the most.
