Börek is one of the oldest recipes of Turkish cuisine. The flatbread has various fillings. But today we suggest using a win-win option. Spinach and ricotta börek is a classic combination that everyone will like.

Our flatbread has an original snail shape. Since this is Turkish pastry, prepare for spiciness. Soaked in the filling, the dough turns out very tender. The rich taste of cheese and the freshness of greens make the börek the best quick snack. Let’s try it.

Steps

1
Done

Mix the flour, egg, sunflower oil, 3 teaspoons of salt and warm milk. Pour in a little warm water and knead a soft dough. Cover with a plastic wrap and leave for 30 minutes.

2
Done

Using sunflower oil, fry 2 tablespoons of chopped garlic, finely chopped onions, sliced jalapenos, and caraway seeds.

3
Done

Add the spinach leaves. After 3 minutes, pour ricotta into the pan and thoroughly mix. Remove from heat and let cool.

4
Done

Divide the dough into 6 pieces. Grease each one with softened butter. Stretch into a thin flatbread and lay the filling on top. Sprinkle with grated cheese and roll up. Repeat with all the flatbreads.

5
Done

Butter a round baking dish and lay out the roll-ups in a circle to form a snail. Coat with beaten egg and sprinkle with caraway seeds. Bake at 400 °F (200 °C) for 35 minutes.

The flatbread with cheese and greens just melts in your mouth. Such a snack is prepared quickly and looks amazing. Equally tasty, both hot and cold. So you can safely take it with you on a picnic!

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
