Usually, at the mention of cutlets, we immediately imagine a hearty, fatty meat food. But what if we tell you that you can make a nutritious cutlet without adding meat? Today, we are going to talk about such a dish; namely, beetroot cutlets.
Beetroot cutlets prove once more that vegetable treats can be both hearty and tasty. Our recipe features feta, but you can easily replace it with tofu if you are a vegan.

Peel and combine onion and garlic in a blender. Peel beets and grate them on a coarse grater. |

Combine beets with onion and garlic, add eggs and oatmeal. Crumble the cheese and season with salt, pepper, and dried basil, toss. Let sit at room temperature for half an hour. |

Form small cutlets from the mass and fry them in olive oil. |
