To me, travel is not only an opportunity to relax and change scenery but also to bring interesting recipes back home. In this sense, Greece is a gastronomic paradise. The abundance of tasty and healthy dishes makes it very hard to leave the table. As a result, I brought the recipe for my favorite garlic roasted potatoes from the fascinating country. I loved them so much that I needed to be able to enjoy them anytime I like.

The dressing of olive oil, lemon juice, garlic, and oregano transforms ordinary baked potatoes into an authentic Greek-style dish. Although it is insanely delicious on its own, it also goes excellent with meat. I prefer to have the flavorful garlic roasted potatoes with the traditional Greek tzatziki sauce. A superior combination!

Thoroughly wash and peel potatoes before cutting each lengthwise into 8 wedges. Transfer to a baking dish.

To make the dressing, combine lemon juice, oil, oregano, and minced garlic.

Pour the dressing over the potatoes and season with salt and pepper to taste. Add some water to partially cover the potatoes.

Preheat the oven to 390 °F and bake for 50-60 minutes.

The dressing gives these Greek-style garlic roasted potatoes tart, lemony flavor. It is not strong but very light and refreshing. And don't even get me started on the indescribably mouthwatering aroma that fills the whole kitchen when baking! To enhance the flavor, sprinkle with chopped basil or parsley.
