A festive roll with tangerines and without flour — a must-have dessert on your table! This divine dish will amaze your guests, and they will not be able to resist taking a bite.

Quick in preparation, and made with the staple of holidays — tangerines, the roll is not only very delicate and delicious but also wonderfully festive.

First, prepare the cream. To do this, mix half of the sugar and ¾ oz (20 g) of corn starch, pour in tangerine juice and mix until homogeneous. Then add lemon juice and ½ teaspoon of zest.

Constantly stirring, cook cream on low heat until thick. Then cover with cling film and let cool.

Now prepare the dough. Separate the egg whites from the yolks. Beat the whites with a pinch of salt, then add half of the remaining sugar and beat until stable peaks.

Mix the yolks with vanilla and the remaining sugar, then beat until lush white mass.

Add ½ teaspoon of lemon zest and mix. Then add 1 oz (30 g) of starch and mix. Gradually, stir in another 1 oz (30 g) of starch. Combine this part of the dough with the egg whites and mix thoroughly. Slowly pour in vegetable oil and mix until smooth.

Line the pan with parchment and grease with oil. Evenly lay out the dough. Bake the sponge cake for 15–20 minutes at a temperature of 360 °F.

Whip the cream and mix it with the tangerine mass until smooth.

Peel the tangerines and divide them into segments. Spread the sponge cake with cream, put the tangerines on one side and brush them with cream.

With the help of parchment, roll the cake, leave it in the refrigerator for several hours. Then remove the paper and sprinkle with powdered sugar.
