A delicious and nutritious breakfast is the key to a successful working day. Wouldn’t it be fantastic to forsake the usual omelet and start your morning with a dish more exciting? Sweet potato casserole with spinach and cheese, for instance. Our recipe has it all!

Sweet potato casserole is an unusual pie with a base of vibrant sweet potatoes and soft egg filling. To say nothing of sun-dried tomatoes and tender goat cheese that enhance the exquisite flavor palette. This breakfast will have you bursting with energy all day long!

Peel and cut the sweet potato into thin round slices. Place them in a bowl, add olive oil and season with salt and pepper.

Cover the bottom and sides of a round baking dish with sweet potato slices. Bake for 25 minutes at 375 °F.

Whisk eggs with salt and pepper. Grind garlic. Add milk and garlic to the eggs and whisk. Add sun-dried tomatoes and mix.

Place spinach on top of the sweet potato base and cover it with the egg mixture. Put slices of goat cheese on top. Bake the dish for 30 minutes at 375 °F.

After it is done, allow the sweet potato casserole to cool for 10 minutes. Before serving, you can garnish the dish with chopped scallions or herbs.
