Usually, at the mention of cutlets, we immediately imagine a hearty, fatty meat food. But what if we tell you that you can make a nutritious cutlet without adding meat? Today, we are going to talk about such a dish; namely, beetroot cutlets.

Beetroot cutlets prove once more that vegetable treats can be both hearty and tasty. Our recipe features feta, but you can easily replace it with tofu if you are a vegan.

Steps

1
Done

Peel and combine onion and garlic in a blender. Peel beets and grate them on a coarse grater.

2
Done

Combine beets with onion and garlic, add eggs and oatmeal. Crumble the cheese and season with salt, pepper, and dried basil, toss. Let sit at room temperature for half an hour.

3
Done

Form small cutlets from the mass and fry them in olive oil.

By the way, you can make quick, super satisfying homemade hamburgers using beetroot cutlets. All you have to do is put lettuce leaves inside a fresh bun and place a cutlet on top. Add your preferred sauce, and voilà! Bon appétit!

I am an English major with a love of languages and fiction, and with an incurable travel bug. In my free time, I read fantasy, drink copious amounts of coffee, and like to go see movies. Culinary art means everything to me. My main hypostasis is the taster, though. The music school has taught me to appreciate the symphony of airy meringues, to create harmonious overtures of light snacks, hard rock of meat, fish, and vegetables on the grill. Choir classes have accustomed me to hear and feel the people nearby and create perfect harmonies of sounds.
