What a blessing it is — after a little effort spent, to eat something airy, light and tender as a reward! In the case of chocolate souffle, a classic French dessert, everything turns out exactly like that.

Chocolate souffle, a weightless delicacy with a rich taste, does not require special culinary skills. You still have to keep the right proportions though. Remember that all ingredients for preparing the souffle must be at room temperature. Note: during the baking, the oven door must not be opened!

Prepare ramekins: grease them with a small amount of butter, sprinkle with sugar and put in the refrigerator.

Melt the chocolate on a double boiler. Add sugar, butter and egg yolks. Thoroughly mix.

Beat the egg whites separately, gradually stir them into the chocolate mixture, mix. Pour the mixture into the chilled ramekins. With a knife, slide along the walls of each ramekin, put the souffle in an oven preheated to 400 °F (200 °C) for 7 minutes.

If you don’t have ramekins, use ordinary thick-walled mugs made of ceramics or tempered glass. Enjoy your meal!
