I have a sweet tooth and can’t imagine my daily diet without a dessert. I love anything except meringues. I’m just indifferent to them. But my daughter loves meringues so I make homemade ones for her. Once I had some leftovers and thought that it would be nice to somehow upgrade this dessert. This is how these sea shell cookies with meringues and nuts were born.

Shortbread cookies are always delicious. Add walnuts and meringues to them and the recipe turns into an amazing dessert. These sea shell cookies remind me of my childhood so I hope you enjoy the recipe too!

Steps

Preheat the oven to 350 °F (180 °C). Line a baking sheet with parchment paper.

Separate the egg whites from the yolks. Chop the nuts.

Combine the softened butter, egg yolks, and sour cream in a bowl and beat with a mixer until smooth.

Add two-thirds of the flour and continue beating at low speed. Add the remaining flour gradually until the dough stops sticking to your hands. Roll the dough into a ball, cover with plastic wrap and place in the fridge.

Beat the egg whites at maximum mixer speed for 1 minute. Reduce the speed and gradually add the sugar. Then increase the speed again and beat until stiff peaks.

Divide the dough into four parts. Roll each into a sausage and cut into 15 equal pieces. Roll each piece into a circle with a diameter of about 2 inches (5 cm).

Place 1 teaspoon of meringue in the center of each circle. Then fold the cookies in half twice. Place them onto the baking sheet and put the chopped walnuts inside each cookie.

Bake for about 25 minutes or until the edges are golden brown.

Let the cookies cool and dust them with powdered sugar.
