When you’re short on time, and you want something quick and easy to put together to feed the family, this chicken and vegetable bake will come to the rescue. There’s hardly any prep work!

This mouthwateringly delicious one-dish chicken bake is super vegetable-heavy. Hence, this recipe is the perfect way to sneak extra veg into your diet. Thoroughly wash all vegetables. Julienne onion, cut peppers and lemon into thin slices, carrot into rounds. Pour some olive oil into a baking dish.

Place a bed of onion in the base of the dish. Cover with green, then red pepper. Arrange unpeeled garlic gloves on top. Next, add carrots and cherry tomatoes, lemon slices, and bay leaves. Season with salt and pepper.

Place chicken leg quarters on top and drizzle them with olive oil. Cover with white wine, then chicken broth. Season with a little more salt and pepper.
